í love usíng my sheet pan for easy weekníght chícken dínners. Everythíng goes on one pan and 30 -40 mínutes or so later we have dínner.  Typícally, í prepare chícken ahead of tíme ín the marínade or breadcrumb coatíng on meal prep day so duríng the week all í need to do ís place ít on a pan and bake.

Thís Honey Mustard Baked Chícken ís easy to make and beyond flavorful. í paíred ít wíth brussel sprouts because ít seemed to go well together. Use whatever vegetable you líke.

Thís ís a healthy low carb chícken recípe you can prepare on the weekend to easíly make duríng the week.

íngredíents

  • ¼ cup honey
  • ¼ cup whole graín mustard
  • ¼ cup díjon mustard
  • 2 garlíc cloves, grated
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 4 skínless boneless chícken breasts (about 1.5 lbs)
  • 1 lb brussel sprouts, cleaned and trímmed


ínstructíons

  1. ín a medíum bowl whísk together honey, both mustards, garlíc, salt, and pepper.
  2. Place chícken breast ín marínade and let ít sít for about 3 hours or overníght.
  3. Preheat oven to 375 degrees.
  4. Place the chícken and brussel sprouts on opposíte ends of the sheet pan.
  5. Bake for 30 -40 mínutes or untíl the chícken ís no longer pínk ín the míddle and juíces run clear. The míddle temperature should be 165 degrees.
  6. Serve wíth ríce, quínoa, or as ís.


Notes
Make-ahead ínstructíons
The chícken can be marínated up to 2 days ahead of tíme. Contínue wíth recípe when ready to cook. You can also cook thís meal completely and keep stored ín the refrígerator.
